ZUCCHINI CASSEROLE 
1 med. onion, chopped
1 lb. ground meat
2-3 zucchini, peeled and chopped and blanched
1 1/2 c. shredded cheese (Swiss or Cheddar)
1 1/2 c. croutons
Tomato sauce as needed (homemade or canned)

1. Brown meat and onion in a frying pan.

2. Grease a casserole dish.

3. Alternate layers of meat, zucchini, tomato sauce, croutons and cheese.

4. Bake, covered, at 350 degrees for 30 minutes.
