ZUCCHINI GROUND MEAT CASSEROLE | |
1 med. zucchini, cubed 2 1/2 c. soft fresh bread crumbs 1/2 c. grated Cheddar cheese 1/2 lb. ground beef 1 sm. onion, finely chopped 1 tsp. salt 1 tsp. sugar 1/4 tsp. pepper 1 c. tomatoes 1 tbsp. butter Cook zucchini in boiling, salted water for 5 minutes. Saute onion in small amount of oil. Add ground beef and cook until brown. Combine meat mixture, 2 cups bread crumbs, cheese, tomatoes, seasonings, and zucchini. Place in casserole; sprinkle remaining bread crumbs on top; dot with butter. Bake, uncovered, at 350 degrees for 30 minutes. Serves 4. |
