ZUCCHINI MEAT CASSEROLE 
1 lb. ground beef
1/2 green bell pepper, chopped
2 med. onions, chopped
1 tsp. salt
1/4 tsp. pepper
1 can Italian tomato paste
1 can water
Grated peel of 1 lemon
1/2 tbsp. sweet basil
Dash of oregano
1 1/2 lbs. zucchini, sliced
1/2 c. bread crumbs
1 1/2 tbsp. melted butter

Brown ground beef, onions and green pepper. Add salt and pepper. Mix together paste, water, lemon peel, basil and oregano. Add to meat mixture. Place 1/2 of mixture into greased 1 1/2 quart casserole. Put half of zucchini over mixture. Add 1/2 of bread crumbs and half of melted butter. Repeat layers. Cover and bake at 350 degrees for 1 hour. Uncover and bake 30 minutes longer. 6 servings.
