EASY BANANA BREAD 
This a delicious, healthy and easy banana bread recipe.

1/2 cup (1 stick) butter
1 cup sugar
2 eggs
3/4 cup mashed ripe banana
1 1/4 cups sifted cake flour
3/4 tsp. baking powder
1/2 tsp. salt

Preheat oven to 350°F.

Cream butter and sugar together until light. Add eggs, one at a time, beating well after each. Stir in mashed banana. Sift together dry ingredients; add to banana mixture. Mix well till blended. Pour into greased 9x9x2-inch pan, (I like Pyrex style pans, but brownie pans will do).

Bake at 350°F for 30 to 35 minutes. Let cool for at least 20 minutes. Cut into squares.

Variation: If you like, you can also add 1/2 cup chopped walnuts to this recipe, just add 1 cup of mashed banana instead of the 3/4 cup indicated.
