NESHAMINY CAKE 
This recipe may "stir" up some memories from the past. If you were a Neshaminy student (like I was in the 70's) you may remember this dessert served in the school cafeteria.

1 1/2 c. boiling water
1 1/2 c. rolled oats
1 1/2 c. brown sugar
1 1/2 c. white sugar
1 1/4 stick butter
4 eggs, beaten
2 tsp. vanilla
2 3/4 c. flour
1 3/4 tsp. baking soda
1/2 tsp. salt
1 3/4 tsp. cinnamon

TOPPING:

1/4 c. + 1 1/2 tsp. butter
3 tbsp. dry milk
3 1/2 tbsp. brown sugar
3/4 tsp. vanilla

Preheat oven to 350 degrees.

1. Combine boiling water and oats and let stand until cool.

2. In a separate bowl, cream together brown and white sugar, butter.

3. To the creamed ingredients, add 1/3 of the oats and water mix, eggs and vanilla. Beat for 3 minutes.

4. Sift together flour, baking soda, salt and cinnamon. Add to the creamed mixture.

5. Add the remaining oats and water mixture. Beat together for 1 minute.

6. Bake at 350 degrees for 45 to 50 minutes in a greased pan.

TOPPING: Cook all topping ingredients in a double boiler until smooth. When cake is cool, cover with topping.

OMG, you forgot the most important ingredient for the topping!!! After you cook all the ingredients in the double boiler, stir in about 1 cup of coconut! Then, spread it on the cake! --DMS, Neshaminy '74

I was just thinking of that while I was reading it. Wheres the coconut?? I dont remember oats in it though.
