NESHAMINY CAKE | |
This recipe may "stir" up some memories from the past. If you were a Neshaminy student (like I was in the 70's) you may remember this dessert served in the school cafeteria. 1 1/2 c. boiling water 1 1/2 c. rolled oats 1 1/2 c. brown sugar 1 1/2 c. white sugar 1 1/4 stick butter 4 eggs, beaten 2 tsp. vanilla 2 3/4 c. flour 1 3/4 tsp. baking soda 1/2 tsp. salt 1 3/4 tsp. cinnamon TOPPING: 1/4 c. + 1 1/2 tsp. butter 3 tbsp. dry milk 3 1/2 tbsp. brown sugar 3/4 tsp. vanilla Preheat oven to 350 degrees. 1. Combine boiling water and oats and let stand until cool. 2. In a separate bowl, cream together brown and white sugar, butter. 3. To the creamed ingredients, add 1/3 of the oats and water mix, eggs and vanilla. Beat for 3 minutes. 4. Sift together flour, baking soda, salt and cinnamon. Add to the creamed mixture. 5. Add the remaining oats and water mixture. Beat together for 1 minute. 6. Bake at 350 degrees for 45 to 50 minutes in a greased pan. TOPPING: Cook all topping ingredients in a double boiler until smooth. When cake is cool, cover with topping. |
