EASY BANANA BREAD | |
3 mashed bananas 2 eggs 1/4 c. Wesson oil 1/4 tsp. salt 1/2 tsp. vanilla (optional) 2 c. plain flour 2 c. sugar 2 tsp. baking powder 1 c. nuts (optional) Add all dry ingredients and nuts to banana mixture. Grease loaf pan well. If you have banana liqueur or extract, you may substitute it for the vanilla, which is entirely optional. Bake at 350°F for about 50 minutes. Makes two loaves. Has a great crust. |

I doubled the recipe and substituted the Wesson oil with Butter along with adding half of 1/4 cup of Vanilla Flavoring. I also added raisins and peanuts and the bread came out Super Moist and Delicious!!
Oh one more thing, I cooked the bread @ 250°F. and let it bake for 2 hours. Due to the 100° heat here, it was better to cook on a lower heat and let it bake longer.
