EASY BANANA BREAD 
3 mashed bananas
2 eggs
1/4 c. Wesson oil
1/4 tsp. salt
1/2 tsp. vanilla (optional)
2 c. plain flour
2 c. sugar
2 tsp. baking powder
1 c. nuts (optional)

Add all dry ingredients and nuts to banana mixture. Grease loaf pan well. If you have banana liqueur or extract, you may substitute it for the vanilla, which is entirely optional.

Bake at 350°F for about 50 minutes. Makes two loaves. Has a great crust.

Love this recipe! Simple and Easy!

I doubled the recipe and substituted the Wesson oil with Butter along with adding half of 1/4 cup of Vanilla Flavoring. I also added raisins and peanuts and the bread came out Super Moist and Delicious!!

Oh one more thing, I cooked the bread @ 250°F. and let it bake for 2 hours. Due to the 100° heat here, it was better to cook on a lower heat and let it bake longer.

I really love this it's quick and easy. I added a couple of things and upped the oil. I added in some coconut and some Philly cream cheese. They really taste great and freeze well,place in freezer while a little warm and they'll be fresher and moist when you thaw them.

I picked this recipe because I had almost everything in the pantry to make it. It came out really good! I did try substituting almond extract because I didnt have vanilla and threw in about 1/4 cup brown sugar as well. It is moist and the crust almost tastes like an almond macaroon. YUM!
