KATHERINE'S STUFFED SUMMER SQUASH | |
2 large summer squash 2 cups boiling water 3 tbsp. butter 1 yellow onion, chopped 1 tsp. minced garlic 1/2 lb. ground beef 3/4 cup Parmesan cheese 1 1/2 cups Panko bread crumbs 1/2 cup grated cheddar cheese 2 strips bacon, cut in half lengthwise 1 tbsp. Worcestershire sauce salt and pepper Cook squash in boiling water 10 to 12 minutes. Remove and let cool. Slice squash in half lengthwise and scoop out the seeds and pulp. Sauté pulp, onion, and garlic in butter. Salt and pepper to taste. Remove to bowl. Cook ground beef. Season with salt and pepper and Worcestershire sauce. Drain excess grease. Mix ground beef, pulp, onion, garlic, Parmesan cheese, and Panko bread crumbs. Stuff squash halves with mixture. Top with cheddar cheese and bacon strips. Bake 45 minutes at 400°F.
