BUTTER RINGS 
A Crisp Cookie with Jam Center.

1/2 cup (1 stick) butter
1/4 cup packed brown sugar
1 egg, separated
1 cup sifted all-purpose flour
1 cup finely chopped nuts or coconut flakes
raspberry jam (for filling centers)

Preheat oven to 300°F.

Cream butter and sugar until light and fluffy. Mix in egg yolk. Add flour. Form into small balls.

Place on fork, and dip into egg white, then into nuts or coconut flakes. Place on baking sheet. Press hole in center.

Bake at 300°F. After 8 minutes of baking, press in center again and continue baking 10 minutes more. Cool slightly.

Remove from sheet. Fill centers with jam.

Makes 3 dozen cookies.
