CUISIN'S RED BEANS AND RICE | |
1/2 cooking spoon of butter 2 tbsp Creole seasoning 1 cup chopped onion 1 cup chopped bell pepper 1 cup chopped celery 3 cups Andouille sausage 1 lb bed beans 1 tbsp fresh minced garlic 3 bay leaves 1/2 cup parsley 7 cups water a pinch of black pepper 3 cups rice Rinse beans well. Fill pot with water, then add onion, bell pepper, celery, garlic, bay leaves and parsley let come to a boil than add creole seasoning when beans start to get soft add Andouille sausage and butter. Season with black pepper. Cook over low heat until the beans are soft and creamy. Rinse rice in a medium sauce pan. Fill the pot with water or broth. When the rice gets soft, rinse in cold water and let the rice steam on low heat for 10 minutes. Submitted by: Stephanie D. White |
