BUTTER WAFERS 
A Crisp Cookie.

1/2 cup (1 stick) butter
1/3 cup sugar
1 egg
1/2 tsp. vanilla
1/2 tsp. shredded lemon rind
3/4 cup sifted all-purpose flour

Preheat oven to 375°F.

Cream butter. Add sugar and continue creaming. Add egg, vanilla, and lemon rind and beat well. Add flour and mix. Drop by teaspoonfuls onto a baking sheet.

Top with chopped nuts, colored sugars or candied cherries.

Bake at 375°F for 7 to 9 minutes or until edges have browned slightly. Do not overbake.

Remove at once from baking sheet.

Makes 40 (2-inch) wafers.
