BUTTER SPRITZ COOKIES
2 1/2 cups sifted all purpose flour
1/2 tsp. salt
1 cup butter
1 1/4 cups sifted powdered sugar
2 egg yolks or 1 whole egg
1/2 tsp. pure almond extract
1 tsp. vanilla

Stir together flour with salt, mixing well.

Beat butter, gradually adding sugar, until creamy. Beat in eggs and flavorings.

Load cookie dough into a cookie press or pastry bag.

Press a small amount out onto ungreased cookie sheets lined with parchment paper using any desired shape disc.

Bake at 400° for 6 to 8 minutes.

Yield: 6 1/2 dozen small cookies.

Variations: Food coloring may be added (such as green when pressing out trees). Sprinkle tops with colored sugar or press a maraschino cherry into the center of a wreath shape. Nonpareils make pretty Christmas bulbs pressed into wreath shapes.

These cookies are just as good or maybe better than the bakery kind. I did not have a cookie press so just shaped them by hand. Cookie is very light and buttery. I rate it as excellent.

Thank you-Thank you-Thank you-This is it!!! The recipe I lost and now have found. I have been making these cookies for years. Recipe was from one of my grandmothers collection that I had saved on an old piece out of a cookbook but lost when I moved this year. My family will be looking for these cookies arount the holidays!

OH Yes! Great recipe... Also better ingredients really do make a difference... I use the really good butter for these! I did use top shelf in oven 400°F for 6 minutes on the nose, let cool a few on sheet before transferring to racks, I used press, flower pattern, put one semisweet dark chocolate morsel in center, FABULOUS COOKIE!!!!!!!

Thanks for this recipe. Me and my dad ended up eating til the wee hours. Lessening the sugar to 1 cup and salt to 1/4 cup wont hurt :)

I was looking for a spritz butter cookie recipe with less butter and this was perfect. The flavor was great. The dough worked great in the press. I did not need parchment paper. The ungreased cookie sheet worked fine. The 6 minutes on the top rack is spot on! Very pleased!
