“MOCHA RINGS” IS IN:

MOCHA RINGS 
1/4 cup shortening
1 cup sugar
1 egg
2 tbsp. cold strong coffee
1 1/2 (1 oz. ea.) sq. baking chocolate (melted)
1 3/4 cups sifted all-purpose flour
2 tsp. baking powder
1/4 tsp. salt

CINNAMON SUGAR:

2 tbsp. sugar
1/2 tsp. cinnamon

Cream shortening, add sugar gradually, creaming until light and fluffy. Add egg and beat well. Add coffee and chocolate that has cooled slightly.

Sift flour, baking powder and salt together and add to first mixture, mixing well.

Roll out on lightly floured surface 1/2-inch thick and cut with doughnut cutter.

Place on a greased baking sheet and sprinkle with a mixture of 2 tablespoons sugar and 1/2 teaspoon ground cinnamon.

Bake in a moderate oven (350°F) for 10 to 12 minutes.

Makes about 30 cookies.
