RACHEL'S SUGARLESS BANANA
OATMEAL COOKIES
 
3 ripe mashed bananas
2 cups instant oatmeal
1/4 cup soymilk
1/3 melted earth balance or coconut oil
cinnamon/nutmeg/ginger
1 tsp. vanilla
1/2 cup raisins (regular or golden)
1 cup nut/seed mix *

Mix and let sit for at least 10 minutes. Spoon into 1-1/2 inch cookie mounds on a greased cookie sheet.

Bake for 10-15 minutes in a 350°F oven.

Cooks Note: My nut mix is usually flax seed, pumpkin seeds, sunflower seeds and chopped hazelnuts.

That's funny. I was making the cookies and all I had was almond milk so I decided to use it and it came out fine. I just thought I would wing it and then I read the above comment. The cookies are good.

Great recipe! I toasted old fashioned oats in some olive oil, that I substituted for coconut oil, added some almond butter instead of a cup of nuts,lets just say when you have a great base for a recipe, you can improvise and make a master piece. When the cookies got brown on the top, I flipped them over and browned the other side. I'm happy! Thx!

I purchased the Cranberry & sage Triscuits, sampled them...so glad I did before serving them to my guests, they are extremely salty tasting and my family all said they had a weird/bad vinegar after taste! Nobody could tell me what the flavour was supposed to be.....very disapointed!

My 2 yr old grandson is not allowed to eat cookies. We spread the mixture in a 9x13 pan and baked "banana oatmeal bars". We baked them for 20 min and he loved them. He had a great time mixing all the ingredients and cooking "by himself"! Thanks for a great healthy recipe.
