VANISHING BANANA OATMEAL COOKIES 
3/4 cup (1 1/2 sticks) butter, softened
1 cup granulated sugar
1 egg
1 tsp. cinnamon
3/4 tsp. nutmeg
1 tsp. vanilla
1 cup bananas, mashed
1 1/2 cups all-purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1 3/4 cups Quaker oats (old fashioned)
1/2 cup raisins (optional)

Preheat oven to 400°F.

Beat together butter and sugar until creamy. Add eggs, cinnamon, nutmeg, vanilla, and bananas; beat well. Add combined flour, baking soda, and salt; mix well. Stir in oats and raisins (if desired); mix well. Drop by tablespoonfuls onto greased cookie sheet. Press down batter into desired cookie shape, batter will not spread during baking process.

Bake at 400°F for 10 to 12 minutes or until golden brown. Cool 1 minute on cookie sheet; remove to wire wrack.

Variation: Replace 1/2 cup white sugar with brown sugar.

Makes about 4 dozen cookies.
