BANANA OATMEAL RAISIN COOKIES | |
Yummy and Healthy! 1 1/3 cups all-purpose flour 1 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1 medium to large banana, mashed 3 tbsp. butter or oil 2 eggs 1 cup white sugar 1 cup brown sugar 1 scoop protein power (I use Isopure "Cookies & Cream") 1 tsp. wheat germ 1 tsp. cinnamon 1/2 tsp. nutmeg 1 tsp. vanilla extract 3 cups Quaker oats 1 cup raisins 1/2 cup chopped walnuts or chocolate chips (optional) Preheat oven to 350°F. In a bowl, mix together flour, baking powder, baking soda and salt. Set aside. In another bowl, cream together butter, eggs, white and brown sugar, protein powder and mashed banana. Add wheat germ, cinnamon, nutmeg, vanilla extract and oats and mix well. Add flour mixture and mix well. Add raisins and nuts or chips (if using) and mix. Place mix on greased cookie sheets with tablespoon about 2-inches apart. Bake at 350°F for 10 to 12 minutes or until bottom and edges begin to brown. Remove from oven. Let sit 3 to 5 minutes then take off sheet and place on a cooling rack. Makes about 2 dozen cookies. Submitted by: Mark, Staten Island, New York |
