PEANUT BUTTER OATMEAL COOKIES 
3/4 c. shortening
1 c. peanut butter
1 1/2 c. brown sugar
1/2 c. water
1 egg
1 tsp. vanilla
3 c. oatmeal (quick or old fashioned)
1 1/2 c. flour
1/2 tsp. baking soda

Beat first 3 ingredients until creamy. Beat in egg and vanilla. Add combined dry ingredients; mix well. Cover and chill at least 2 hours. Heat oven to 350 degrees.

Shape into 1 inch balls. Place on ungreased cookie sheet, flatten with tines of fork dipped in sugar to form criss-cross pattern. Bake 9-11 minutes. Cool 1 minute on cookie sheet, remove to wire rack. Cool completely. Store tightly covered.
