MY EASY POTATO SOUP 
Potatoes
Onion
Salt
Pepper
Milk
Butter
Crackers

Peel and dice potatoes, dice onion then boil potatoes and onion until potatoes are fork tender.

Drain half of water and replace with milk. Add some butter, salt and pepper to taste. Cook until hot then its done. Top with crackers.

Wonderful and easy recipe! I add a little instant potatoes to give it a thicker, creamier texture, and omit the milk as our family has dairy allergies. But YUM!

I just made this, at the last minute before adding the milk, I added Sour Cream! Delicious! I'm going to make more with some bacon, and I place a little shredded cheese on top!

Always shredded the potato and onion with the cone grater on our Kitchenaid. Similar to what is used for hashbrowns. Use a lot of a mild onion. cover with water and add salt and white pepper. When the potatoes are just done, turn off the heat and add butter to taste and then a can of canned milk. There will be enough starch in the remaining water to thicken the soup some and to thin the condensed milk. Serve with diced cheese on top, diced ham if desired and crackers if you must. Fast, easy and tastes great.

Just like my grandma used to make except she added canned milk and used flour to thicken. Lord knows I miss that woman and her cooking.

Just made this. To much milk for my liking, but it did have a good taste. Added bacon, chicken broth. Wife added a little flower and milk to thicken. I added a little to much salt and pepper. Will make again cause I love potato soup. My mom made the best, but this is good.

Thank you for posting this recipe!

I grew up eating this soup and 6 decades later, it's still one of my favorite comfort foods :)

At times I'll add a handful of dry pasta (noodles, etc) while the potatoes are cooking for a heartier soup. Just before serving, adding half a can of green peas also gives it a boost of color.

Try a little celery salt to it. Say, 1/4 teaspoon and taste before adding more.
