MY EASY POTATO SOUP 
Potatoes
Onion
Salt
Pepper
Milk
Butter
Crackers

Peel and dice potatoes, dice onion then boil potatoes and onion until potatoes are fork tender.

Drain half of water and replace with milk. Add some butter, salt and pepper to taste. Cook until hot then its done. Top with crackers.

I left the potato skins on for extra vitamins, added finely chopped celery, onion, and chicken. I used chicken broth instead of water, then added lots of seasoning and served with corn bread. Huge success with my meat and potatoes guys.

Darn good soup. Almost identical to my Grandma's recipe except add three ribs of celery sliced thin including tops. cook until soft in lightly salted water barely to cover. Mash veggies a little when they're soft, then add milk/cream/butter to taste. To make this soup a soul warming experience use real butter and half milk and half cream.

Grandma, and then my Mom made this soup at least twice a week for lunch in winter. I never got tired of it. Comfort food at it's most comforting. Grandma always made her own crackers, too. She said it was less fuss than going to the store.

I use a similar preparation. Like most commenters, I add bacon, but fix it up first by carmelizing it in a separate pan first with sugar and adding the onions. I overcook the bacon slightly, and add it towards the end so it doesn't turn out soggy.
