“MOM'S RHUBARB COBBLER” IS IN:

MOM'S RHUBARB COBBLER 
CRUST:

1 c. flour
1/2 tsp. salt
1 beaten egg
1 tsp. baking powder
2 Tbsp. butter
1 Tbsp. milk
2 c. rhubarb, cut up
1 pkg strawberry Jello

TOPPING:

1/2 c. flour
1 c. sugar
1/4 cup melted butter

Preheat oven to 350°F.

Cut butter into flour. Add egg and milk and rest of ingredients. Mix well. Makes a soft dough. Press dough into a 8x8 or 9x9-inch pan, pressing dough out and up the sides of the pan. Cover dough with rhubarb, sprinkle with Jello.

In a bowl mix topping ingredients. This will make a crumbly mixture, which you sprinkle over the top of the dry Jello.

Bake at 350°F for 30 minutes.

Best served hot with ice cream on top.

This was one of the joys of Summer, when Mom would make this. I always got her to make extra topping because that was what I thought was the best part.
