BANANA BREAD MUFFINS 
1 stick butter
2 eggs
1 1/4 c. self-rising flour
1 c. sugar
2 over-ripe bananas
1/2 c. nuts (optional)

Cream butter and sugar, add eggs, then bananas, flour and nuts (may be done in food processor). Bake in cupcake liners at 350 degrees for 12 minutes. Makes 18 muffins or 1 large or 2 small loaves. Bake loaves at 325 degrees.

A few hints. 1) This recipe is underseasoned so I added 1 tsp nutmeg, 1 tsp cinnamon and 1 tsp vanilla. Add them before the flour. 2) Mix the flour and nuts by hand for fluffier muffins. 3)For a nice topping, add 1/4c brown sugar cut with butter befor baking. 4) These muffins were NOT done in 12 minutes. It took at least 20. I kept watching until the top was golden brown.

This recipe is SO easy and FANTASTIC!! I added 1 tsp. vanilla and did have to cook the muffins for about 18 minutes. Amazing!!!
