BANANA BREAD MUFFINS 
5 tablespoons butter
1/2 cup sugar
1/2 cup packed brown sugar
1 large egg
2 egg whites
1 teaspoon vanilla
1 to 1-1/2 teaspoons cinnamon
1-1/2 cups mashed ripe bananas
1-3/4 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 cup milk
2/3 cup walnuts, chopped

In a bowl - combine butter and sugar until well beaten. Add egg and egg whites and vanilla, beat until well beaten. Add mashed bananas, mix well. Combine flour mixture to butter mixture alternately with milk. Add nuts. Mix well. Pour batter into greased loaf pan (9x5x3) or fill muffin tins (lined with muffin papers) 2/3 inch from top.

Bake at 350°F. Loaf pan - 1 hour and 15 minutes or muffins - 15 to 20 minutes.

Bake until browned and toothpick inserted neat center comes out clean. Cool bread in pan on wire rack 10 minutes. Remove from pan. Cool completely. Slice and serve with butter
