POTATO SALAD 
6 medium sized potatoes, peeled and cubed
1/2 cup mayonnaise (like Duke's)
1/2 cup Miracle Whip
3 stalks celery, chopped
1/4 to 1/2 red onion, minced
1/4 cup sweet relish, drained
2 tbsp. yellow mustard
2 to 4 hard-boiled eggs, chopped
cooked, chopped bacon or bacon bits (optional)
paprika, for garnish

Cover potatoes with water that has been salted to taste. Cover and bring to a boil over high heat.

Reduce heat to medium and simmer for about 8 minutes. Drain in colander and cool completely. This is very important.

Mix mayonnaise, Miracle Whip and fixings. Pour on potatoes and fold until well combined. Be careful not to break up the potato chunks.

Chill and garnish with paprika.

Variation: Instead of adding whole eggs, the yolks can be blended into the mixture while the whites are cut into rings and sprinkled over the top.
