AL'S FAMOUS POTATO SALAD 
This is always requested when we're invited to a pot luck party. This will easily feed 25+ people. It can be scaled down smaller.

10 lb. potatoes
10-12 hard boiled eggs
2 bunches green onions, chopped into small pieces
1 bunch celery, chopped
sliced olives (optional)
4 packs HIDDEN VALLEY® "ORIGINAL" mix (not dip mix)
Equal amounts of sour cream and real mayonnaise

Peel and cube potatoes. Boil until still fairly firm (not mushy). Use potato masher to coarsely mash.

Chop or use egg slicer for eggs - add to potatoes. Reserve 2 sliced for top of salad. Add green onions, celery and olives.

In a separate bowl, mix equal amounts of sour cream, real mayonnaise, and HIDDEN VALLEY® "ORIGINAL" MIX (not dip mix).

Start with 2 packs and taste; add more as desired. Add dressing to potatoes and other ingredients. Mix well. When fully mixed, put in a "large" bowl, smooth out the top. Top with the two remaining sliced eggs and sprinkle with paprika.

Refrigerate and ENJOY!!

This is the first time I have made potato salad. I think it turned out great. I may have boiled the potatoes a bit to long. But non the less, still tastes great. I will be taking it with us for Easter and i feel they will like it too. Thanks Al!
