“ALFREDO SAUCE - NOT A MIX!” IS IN:

ALFREDO SAUCE - NOT A MIX! 
4 tbsp. (1/2 stick) butter
4 tbsp. all-purpose flour
1 cup cream (or half and half or milk)
1 cup chicken broth
1 cup shredded Italian cheeses (Mozzarella, Romano, etc.)
1/2 cup Parmesano Reggiano cheese (or plain Parmesan)
3 tbsp. fresh or 1-2 tbsp. dried parsley
4-5 cloves garlic, minced
1/2 tsp. fresh nutmeg
1/4 cup sherry or white wine
salt and pepper

Melt butter and add flour. Cook for 2-3 minutes, stirring constantly to cook flour. Add cream and broth all at once and blend well. Add the remaining ingredients and stir until cheese has melted and sauce is smooth.

Pour over chicken, shrimp or pasta.

Additional cheese can be added to the topping, if desired. Bake in oven until cheese is golden brown.

This is very similar to the recipe I made up for myself as I have a heart condition and need the skinny version of Alfredo sauce. We like to enjoy the finer things in life and have devised methods of making many things more healthy for the heart. Where there is a will there is a way. Thanks for posting this recipe as it sounds good with a few different twists to it. Will try it next time.

Really, really good! I added a little more butter, cream and flour, more garlic, 1 1/2 cups of parmesan and 1/2 cup of mozzarella (because that's what I had on hand) & substituted more chicken broth for the alcohol because my kids don't like the taste. They are grown, but neither of them drink.
I like that I can customize this (as I do most recipes - LOL) and that even a novice (like my sons) can make it because it's so simple. Thank you for sharing!

Absolutely yummy ! Because I am a vegetarian the only thing I changed was the chicken broth, used vegetable broth instead. I like to try recipes as they are recorded first and then tweak but yours needs ZERO tweaking !

Very good. I used 2 large cloves of garlic and it was perfect amount. The cooking sherry at the end thinned it to the perfect consistency.

Wonderful recipe!! Omitted nutmeg & sherry, used 2% milk, added shredded mozzarella in sauce with Italian seasoning... Added bacon & frozen peas. Very good fake out to chicken carbonara.
