10 MINUTE NEVER FAIL MICROWAVE
PEANUT BRITTLE
 
1 cup sugar
1/2 cup light corn syrup
1 cup raw peanuts
1/8 tsp. salt
1 tbsp. butter
1 tsp. vanilla
1 tsp. baking soda
Combine first 4 ingredients in 2-quart microwave mixing bowl. Microwave on HIGH for 8 minutes, stirring after 4 minutes. Add butter. Microwave on HIGH 2 minutes. Brittle should not get too brown. Stir in vanilla and baking soda until light and foamy.

Spread on buttered baking sheet as thinly as possible. Cool. Break into pieces.

To get nice even squares, pour into a buttered silicone mold with squares.

Since microwave ovens vary in power, you may need to adjust your cooking time.

Made as per recipe but adjusted cooking time for 1200 watt microwave. Used the 3 min, 2 min, 1 min that another reviewer suggested and it came out great. Also used parchment on baking sheet for easy cleanup.

This is the first time I attempted to make peanut brittle. I followed what one reviewer did and cooked the first 4 ingredients for 6 minutes at 80% power, stirred,added the butter and vanilla and cooked 2 minutes at 80% power and then added the soda. It resulted in a much too soft "brittle". My husband suggested putting it in the oven. I thought what have I got to lose, so I baked it at 350 degrees for 12 minutes and it came out GREAT! It spread out nicely in the pan (which I had placed buttered aluminum foil on). After it cooled it was crispy and airy - we couldn't stop eating it. So if you do undercook your brittle, try salvaging it by putting it in the oven.

Cleaning the bowl is pretty easy if you have some time to just let it soak. Fill the bowl to the top with hot soapy water and then drape a strip of paper towel over the edge any place the brittle is above or outside the water. Wet the whole strip and put one end in the water and the other one patted against the bowl. Capillary action will keep the towel wet as long as the one end is in the water and the clumps of brittle under it will just dissolve away.

Awesome recipe I tried it with macadamia nuts. I guess any nut goes, every one loved it. I used clear plastic wrap sprayed non-stick, cooled and peeled of easy. Great recipe.

This a great recipe. The only thing I suggest is stir between one and a half minutes, it keeps the sugar from burning. I only need 4 minutes for the whole recipe. I have gotten several requests for my home made microwave peanut brittle. If you like cashews they are great as brittle as well.

To clean your bowls and any utensils you use. Boil a pot of water. When you have poured out your brittle pour the boiling hot water on your utensils let it sit a few minutes the hardened sugar comes right off. I spread my brittle with a spatula that I spray with pam.

I bought one of those LARGE 2 quart Pyrex mixing pitchers with the handles. Very easy to handle the HOT glass! The timing depends on your bowl, if everything is room temperature, if your soda is new, lots of variables. But the end result is great, just need to test it out with your microwave. Trial and error. Just put messing bowl in sink and run the HOT water into it and let sit. It melts right off.

You've got to try this recipe!! It never fails even with my old microwave. Even when I put the butter in too soon! It's the perfect peanut brittle. I even shell my own peanuts because my grandchildren are allergic to tree nuts.
