“ITALIAN SALAD DRESSING OR MARINADE” IS IN:

ITALIAN SALAD DRESSING OR
MARINADE
 
1 1/3 cups olive or vegetable oil
1/3 cup red wine vinegar
1/4 tsp. whole peppercorns
pinch of hot pepper flakes
3 cloves garlic
1/4 teaspoon rosemary
1/4 teaspoon oregano
1/4 teaspoon basil
1/2 teaspoon salt, or to taste
1/4 teaspoon freshly ground black pepper
1/4 cup grated Parmesan cheese

Process all ingredients in a blender til smooth, or mince the garlic and whisk together.

To make a flavorful marinade, double the herbs, add another clove or two of garlic and process in blender. To make a French vinaigrette, add 1 tsp. mustard.

Here's a tip for a faster, easier way to use fresh garlic in a dressing: (optional: make the dressing 1- 2 hours ahead, or a day ahead, for more garlic flavor.)
Slice the peeled whole clove part way through, to release the juices. Drop the partially-sliced whole clove in the dressing. Let sit on the counter for 1-2 hours, or in the fridge up to 24 hours, for extra-garlicky flavor.

This saves a little time by not having to clean a cutting board or garlic press.

Similarly, when adding garlic to a soup or stew, just add the peeled whole clove. Once the clove is cooked and soft, mash it against the side of the pot with the back of a tablespoon; stir in.
