CRUMB TOPPED COFFEE CAKE 
1/2 c. sugar
1/4 c. flour
1/4 c. shortening

Mix this together until crumbly.

BATTER:

1 1/2 c. flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1 egg
3/4 c. sugar
1/3 c. shortening
1/2 c. milk
1 tsp. vanilla

Beat egg until frothy, then beat in sugar and shortening until well mixed. Beat in milk and vanilla. With wooden spoon, stir in flour mixture until well mixed. Pour into greased 9 x 1 1/2 inch layer cake pan. Sprinkle with crumb topping. Bake at 375 degrees for 25-30 minutes.
