MUSHROOM TOPPED PORK CHOPS 
4-6 boneless pork chops, 3/4 inch thick
1 tbsp. butter

TOPPING:

1 c. chopped mushrooms
1 tbsp. butter
1/2 c. finely chopped parsley
1/3 c. finely chopped red onion
1 egg
1 tsp. salt
Dash of black pepper
2-3 tbsp. grated Cheddar cheese

Heat butter in pan. Brown both sides of pork chops, place in oven-proof dish.

Prepare topping: Sauté mushrooms in butter in a skillet until they are no longer moist. Cool.

Mix mushrooms, egg, parsley, red onion, salt and pepper. Pour topping over pork chops.

Bake at 350°F for 40 minutes. Sprinkle with cheese after 30 minutes of cooking time.

Check for doneness at side of pork chops, juice should run clear.

Makes 4 servings.

Preparation time: 15 minutes; cooking time: 40 minutes.
