EGG FOO YOUNG | |
1 c. slivered pork, sauteed 1 can canned bean sprouts 1/4 c. slivered green pepper 1/2 tsp. salt Scallion fans 1/2 c. shredded lettuce 1/4 c. thin sliced onion 1/4 c. chopped pimento Vegetable oil 6 eggs Brown gravy White rice Put meat, sprouts, lettuce, onion, pepper and pimentos in large bowl. Toss. In small bowl beat eggs slightly and add to other bowl, add salt, and combine well. Put 1 tablespoon oil in small skillet, heat on high. Drop 1/2 cup mixture into oil. Cook until just brown, flip and brown on other side. Place on platter and garnish with scallion. Serve with brown gravy (Franco-America's is good) and white rice. I suggest rice with 1 pancake on top, then gravy on top of that. |
