EGG FOO YOUNG 
1 can bean sprouts
6 eggs
1 can shrimp (does not have to be large since they get cut up)
Green onion, chopped (use part of greens for looks)
1 sm. can sliced water chestnuts (use all or part)
Oil (for fry pan)

Beat eggs until lemon color and add bean sprouts, shrimp, green onion, water chestnuts and soy sauce to taste. Heat fry pan; add cooking oil (a generous amount). Spoon out the mixture, making 4 or 5 patties. If any of them should look like they need more liquid, spoon more egg onto it. You will get the idea after you do a couple. Cook until golden brown. Serve with a light chicken gravy seasoned with soy sauce.

GRAVY:

1 chicken bouillon cube
Soy sauce
Cornstarch
Water

Decorate platter with a little of the chopped green onion for looks.
