EGG FOO YOUNG 
1 pkg. Rice-a-roni, cooked, cooled
1 tbsp. soy sauce
1/4 c. chopped green onion
1 c. chicken, shrimp, beef or pork, cooked and cubed or shredded
4 eggs
8 oz. bean sprouts
1/8 to 1/4 c. celery, chopped

Beat eggs with soy sauce; add sprouts, onions, celery and meat of choice. Spoon onto hot griddle to make a 4 to 6 inch patty; brown, flip over with a spatula and brown other side. Serve with sauce below.

SAUCE:

2 tbsp. soy sauce
2 tbsp. cornstarch
2 c. water

Mix soy sauce and cornstarch in small saucepan. Over low heat, slowly stir in water; cook over low heat, stirring constantly, until desired thickness and bubbly.
