RED BEANS & RICE | |
![]() 1 tbsp. butter 1/2 medium green pepper, chopped (about 1/2 cup) 1/2 medium onion, chopped (about 1/2 cup) 1 can (14 1/2 oz.) beef broth 1 can (15 1/2 oz.) red kidney beans, drained, rinsed 1 tbsp. Cajun seasoning 2 cups MINUTE® White Rice, uncooked Hot pepper sauce (optional) Melt butter in large skillet over medium heat. Add bell peppers and onions; cook and stir until crisp-tender. Add broth, beans and hot pepper sauce; stir. Bring to boil. Stir in rice; cover. Remove from heat. Let stand 5 min. Fluff with fork. Serve with pepper sauce, if desired.
