BROCCOLI CORNBREAD | |
4 eggs 1 lg. onion, chopped 1/2 stick butter 1 tsp. salt 6 oz. cottage cheese 1 (10 oz.) pkg. chopped broccoli 2 boxes Jiffy cornbread mix Mix first 5 ingredients; add broccoli and cornbread mixes. Mix together in large bowl. Bake in a greased 9 x 13 inch pan at 350 degrees for 45 minutes. Yield is 15 servings. This recipe won Mrs. Callender's daughter, Melanie, a blue ribbon at the San Patricio County (Texas) 4H Food Fair. |
