BAKED FISH WITH MUSHROOMS 
1 1/2 lbs. haddock, flounder, cod (or thick fillet)
4 tbsp. butter
12 oz. sliced mushrooms
1/2 c. sliced scallions (or 2 tbsp. minced onion)
1 clove garlic, minced
3 tsp. lemon juice
Bread crumbs
Parmesan cheese
Parsley, salt, pepper

In large skillet, melt butter. Saute mushrooms, scallions and garlic until tender. Add lemon juice. Place fish in baking dish, pour mushroom mixture over top. Sprinkle with bread crumbs, cheese, parsley. Salt and pepper to taste.

Bake 1/2 hour at 350 degrees or until fish flakes (uncovered).
