BANTA BAKED BEANS 
2 lbs. Great Northern beans
1 tbsp. salt
2 c. brown sugar
1 to 1 1/2 lb. chunk bacon (NOT salt pork)

Soak beans overnight in Dutch oven, or boil, cool, let stand for 1 hour. Pour off water, add fresh water to cover by 1 inch and mix in salt. Cook until skins break then mix in brown sugar. Cut bacon into 1/2 inch cubes and put on top. Bake at 350 degrees, uncovered, for 4 hours.
