ONION AND TOMATO DELIGHT 
1 med. onion, chopped
2 tbsp. oil
1 fat, juicy ripe tomato, peeled
3-4 slices mild cheese, American or Cheddar
Garlic salt
Pepper
Oregano or basil
Bacon bits

Heat oil in medium sized frying pan. Add chopped onion and saute until limp. Slice your tomato in 1/2 inch slices and cook for 3 or 4 minutes over medium heat. Add cheese slices and seasoning. Cover and turn off heat. Cheese will melt by the time you have your plate ready. Sprinkle with bacon bits. Don't dash in - that tomato is hot. This dish can be served anytime, day or night.
