MUSHROOM AND GARDEN FRESH TOMATO
DELIGHT SANDWICH
 
6 thick (1 1/2 to 1 3/4 inch) slices Italian or Vienna bread
Soft butter
12 thin slices tomato
2 c. thinly sliced fresh mushrooms
Coarsely ground black pepper
Parmesan topping

PARMESAN TOPPING:

1 c. mayonnaise (not salad dressing, please)
1/2 tsp. freshly grated lemon peel
1 tbsp. freshly squeezed lemon juice
1 tbsp. chopped chives
1/2 c. grated Parmesan cheese

PARMESAN TOPPING: Mix all together.

Lightly spread both sides of bread with butter and toast lightly on both sides under broiler.

When done, top each slice with 2 tomato slices, 1/3 cup mushrooms and sprinkling of pepper. Spread each with generous spoonful of Parmesan Topping. Return to broiler. Broil about 3 minutes or until bubbly and lightly browned. Serve immediately. Serves 6.
