VANILLA CAROB CAKE 
3 lg. eggs
1/3 c. mashed banana
1/2 c. butter, softened
1 1/4 c. milk
2 tsp. vanilla extract
2 1/4 c. unbleached white flour
3/4 c. carob powder
2 tsp. baking powder
1 tsp. baking soda
1 c. flaked coconut

Beat together eggs, banana, butter and milk until creamy. Add vanilla extract, flour, carob powder, baking powder and baking soda. Beat well. Stir in flaked coconut. Spoon batter evenly into an oiled not greased and floured 9 x 13 inch pan. Bake at 350 degrees for 20 to 25 minutes or until a knife inserted comes out clean. Cool. Frost with Creamy Carob Frosting.

CREAMY CAROB FROSTING:

1/2 c. mashed banana
1 tbsp. butter
6 tbsp. carob powder
1 tsp. vanilla extract
3 tbsp. unbleached white flour

Beat together. Spread on cool cake. Makes 3/4 cup.
