“QUICK RICE PUDDING” IS IN:
NEXT RECIPE:  RAISIN NOODLE PUDDING

QUICK RICE PUDDING 
2 cups cooked rice (1/2 to 2/3 cup uncooked)
1/2 cup sugar
1/2 tablespoon butter, melted
1/2 tsp. nutmeg
2 eggs, beaten
2 cups milk
1 tsp. pure vanilla or 1 tbsp. rum (optional)
1/2 cup raisins

Combine all ingredients well. Place in a greased casserole dish. Put the casserole dish in a shallow pan of hot water and bake for one hour at 325°F.

I'm not sure how just a 1/2 tablespoon of melted butter can have any bearing on the whole recipe, so I put in 2 tablespoons of melted butter and a dash of cinnamon and it was perfect!

I made this recipe and doubled it. I forgot to add the salt and only used a cup and a half or a little more and it was just sweet enough. I raised the temperature to 400°F because after 30 minutes it was still very loose. I cooked it for about 35 minutes more and it set perfectly. I'll never buy store bought rice pudding again. You can never go wrong when you use recipes from CM.

I tried this recipe for the first time today. It was delicious! The only thing I would change the next time would be to add a bit more milk. Also, I did not add raisins or nutmeg because I do not like either. I added 1/8 tsp. almond extract instead. This recipe is a keeper!

I found that using between 1/2 and 2/3rds cup of rice was too much. I had to add quite a bit more milk to the dish ..but at the end it was yummy!

It did not say 1/2 and 2/3 rice. It said 1/2 to 2/3 rice. Makes a huge difference.

I tried it w/o raisins... it's in my oven now... didn't have any... used pumpkin pie spice instead of nutmeg... less sugar... hot water... that's the key right there...

This is a great recipe but I found out that putting marshmallows on top of it made it twice as sweet and twice as fun for the kids!!! Gave it a campfire fun taste!
