SHERRY'S FAST CHAI RICE PUDDING | |
Smells amazing! Tastes even better. Great use for leftover rice. Takes about 40 minutes from start to finish. 5 cups vanilla soymilk 1/2 cup sugar 1 cup raisins, rinsed (Craisins are very good too!) 3/4 cup spiced chai drink mix 5 cups cooked basmati or jasmine rice 1/2 cup chopped, unsalted pistachios 1/2 tsp. salt 1 tsp. vanilla 3 tsp. rose water 1 beaten egg (optional: leave out if strict vegetarian) cardamom, vanilla, cinnamon (optional) Heat soymilk and sugar in a large pot, on medium heat. Stir to ensure it does not burn to the bottom (could do this in the microwave). Add raisins, chai drink mix, cooked rice, pistachios, salt and vanilla. Stir over low-medium heat till mixture thickens and reduces slightly. Add rose water. Temper beaten egg with some of the hot pudding, then add to the mixture to thicken slightly (can be left out, if vegetarian). Adjust spices to taste: cardamom/vanilla/cinnamon, etc. The pudding will thicken as it cools, but tastes best warm. Can be microwaved (on low) to get a nice, creamy texture.
