RICE PUDDING 
1/4 c. (1/2 stick) butter
4 c. milk
dash of salt
1/3 c. rice
1/3 c. sugar
1 egg
1 tsp. vanilla
nutmeg

Melt butter in a large pot. Add milk and a little salt. Bring to a boil. Add rice. Lower heat and let cook gently until thick, stirring occasionally. Remove from heat.

Mix sugar, egg and vanilla together. Add a little of the hot pudding, then stir into rest of pudding. Let cool. Add nutmeg to taste. Pudding will thicken as it gets cold, so cook it to a thinner consistency than you want it to be when it gets cold. Serve chilled.
