QUICK EGG NOG PUDDING 
1 (3 oz.) pkg. instant vanilla pudding
1 cup milk (I use skim)
1 cup egg nog
1/2 tsp. ground nutmeg

Look for a package of instant vanilla pudding which requires 2 cups of milk to prepare to match these directions.

Put the milk and egg nog into a mixing bowl at least 3x the volume required to hold the liquid. Using either a whisk or a hand mixer with whisk attachment on lowest power setting, slowly mix in the instant powder. Once all the power is mixed in, add ground nutmeg, then whisk mixture for a good 5 to 10 minutes until it thickens nicely and begins to fluff slightly. When the ripples created by mixing take at least 5 seconds to disappear, that's about where you can stop.

Serve immediately if you can't wait, but chilled for an hour is best. Nice topped with a dollop of whipped topping and a small additional sprinkle of nutmeg, but also good as-is.
