ARROZ CON GANDULES - PUERTO
RICAN STYLE
 
2 1/2 cups long grain white rice
5 cups water
3 tbsp. olive oil
4 tbsp. sofrito (jarred or make your own by dicing onion, bell pepper (any kind), garlic, cilantro and tomato)
1/4 cup chopped bacon
1/4 cup chopped ham or sausage
2 tbsp. Spanish olives
1 can green or dry pigeon peas, drained
1 env. Sazon with annato
1/2 tsp. ground oregano
1/2 tsp. ground cumin
2 bay leaves
1/2 tsp. tomato paste
salt and black pepper, to taste

Start by heating the oil in a pot at high heat, and when the oil is nice and hot, add the bacon. When the bacon is cooked but not crisp, add the ham/sausage. Once that has browned, add the Sofrito. This must stir fry all together for about 1 minute.

After that has been done add the water, then the peas, the olives, the tomato paste, and all the spices, including the envelope of Sazon.

At that point, add salt and pepper to taste. Bring this up to a boil then stir in rice.

Once it has began to boil again, lower heat and stir 1 more time, then cover.

Let this cook for about 30 to 40 minutes on a low heat setting, stirring occasionally (every 10 minutes) until the rice is tender. Serve.

This is great, I am puerto rican its not quite like my grams but close everyone that is having issues with how its turning out could be using the wrong kind of pot to cook it in, you can not use a regular pot or pan it doesnt allow the rice to cook the same way I use cast iron.

To avoid mushy rice, you'll want to boil your rice until most water has evaporated.. Do not stir at any time! Once water has evaporated, place on low heat and cook till ready..for me at least an hour.

Ladies if your having a hard time with this recipe try not adding any tomato sauce or paste. Try to add another packet of sazon or more recaito. I tend not to use the tomato sauce as it leaves my rice mushy. I HATE MUSHY RICE. Once I pulled out that ingredient the rice was remarkable. Now I have become a little bit more experienced cooking this dish however if your not good with rice I highly recommend the above suggestion.

I just made it today. It tasted EXCELLENT. Slight modifications I made were 2 envelopes of Sazon instead of 1 and I used 3 cups vegetable stock in addition to 2 cups of water. HOWEVER, (however)... the rice is enough to feed a FAMILY OF 6! So, if you are preparing this for up to 4 people, you can easily cut the ingredients in half. ALSO, (MOST IMPORTANT) the rice soaked up the liquid in less than 10 min thus leaving me to pour more water while rice was cooking - NO NO! The rice came out gooey and sticky due to this constant "massaging" while cooking. So, instead of 2.5 cups of rice for 5 cups of liquid, I'll use 1.5 cups of rice next time. Otherwise, flavors were OUTSTANDING!

Missing Mamy's arroz con gandules, so I am traing to make it just like the recipe said. It smells so good and looks really great. I added costillas de cerdo since I did not have bacon or sausage. I miss the tostones too, but here in Humansville Missouri they do not sell then platanos. I have to drive to Bolivar or Springfield. Anyway, thanks. I came out really good.

I didn't have much success with the recipe, I thought I followed it to a 'T' however, the rice was mushy and not flavorful at all, not sure what I did wrong. My daughter suggested I add two packets of Sazon for more flavor next time. After reading all the comments I realize it must be me as everyone else had great success. I will give it another try.

As with Cynthia my rice had no flavor and I followed the recipe to a tee. So disappointed. I expected to eat a whole pot of rice by myself. Usually I have a very nice latina lady that shares hers with me & I finish every drop. I will however try again and my rice was also mushy and I only stirred it the one time and used less water. I can cook a million recipes but I just cant get this rice right. Help!

My recipe for this dish is almost the same. However I use frozen gandules, pork or ham chopped in little bite size pieces... It gives it so much more flavor and my rice is always a big hit.
