PAN DE POLVO (WEDDING RING
COOKIES)
 
6 pounds flour
3 pounds shortening
1 pound granulated sugar
1 cup cinnamon tea
1 pkg yeast
Confectioners' sugar

Boil cinnamon sticks in water to make a cinnamon tea. Allow to cool to about 95°F. Dissolve granulated sugar and yeast in warm tea. Set aside.

Combine flour and shortening until light, then mix in tea. Knead dough until soft. Pinch off small portion (a teaspoonful or less) and roll dough in your hands to form rings.

Preheat oven to 350°F.

Bake rings for 10-20 minutes or until lightly golden in color. As they come to the end of the baking time, watch carefully to be sure they don't overbake. Remove from oven. Toss, still warm, in a paper bag of confectioners' sugar. Optionally, add cinnamon to the sugar.

Allow to cool completely, then store in a ziploc bag.
