SWEET ONION CHICKEN 
6-8 boneless chicken thighs or breasts
1/4 cup cornstarch
3 tbs. water
1/2 cup onion, sliced
1 cup chicken broth
3 tbs. lemon juice
1/4 cup brown sugar

Mix cornstarch and water, add chicken, coat and marinate for 15 minutes. Heat oil in pan on high; add chicken one piece at a time and brown on one side.

Turn chicken over and add onion, cook 5 minutes. Add chicken broth, lemon juice and brown sugar.

Reduce heat to medium and cook for 15-20 until sauce is thickened.

I enjoyed this recipe the first time. I'm going to try substituting beer for some or all of the chicken broth. Trying to decide which beer to use. I'm thinking Guinness would compliment the sweetness of this dish.

I loved the simplicity of this recipe. The chicken was done in around 35 minutes and it had just a hint of lemon and sugar. Wouldn't change a thing!
