CURRIED CHICKEN SALAD | |
1 (7 oz.) pkg. chicken flavored Rice-a-Roni 1/3 cup long grain rice 3 green onions, chopped 1/2 red bell pepper, chopped (optional.. my husband doesn't like it!) 2 (6 oz. ea.) jars marinated artichoke hearts (chop them up a bit) 1 (6 oz.) jar green olives 1/2 cup salted peanuts (or more, to taste) 2 chicken breasts, cooked and diced 1/3 cup real mayonnaise (you can always add more after you put it all together if it looks dry) 1/2 tsp. dry mustard 1/2 tsp. curry powder (I usually use a little more, but I like a lot of curry!) 1/2 tsp. lemon juice salt and pepper, to taste Cook long grain rice with Rice-a-Roni according to package directions. Toss rice with onions, bell pepper, artichokes, olives, peanuts and diced cooked chicken. Mix mayonnaise with the dry mustard, curry, lemon juice, salt and pepper. Add to rice and toss. Refrigerate.
