SPINACH SOUFFLE 
1 pkg. chopped spinach, cooked
1/2 c. egg beaters or 2 eggs
1/2 c. chopped onion
Dash of garlic
Dash of season salt
Dash of salt and pepper
1/8 c. Parmesan cheese
2 slices Swiss cheese

Cook spinach and drain well. Combine all other ingredients. Transfer to a buttered 3-quart souffle dish and top with sliced Swiss cheese.

Bake at 350°F in preheated oven for 20 to 25 minutes or microwave on high for 5 minutes (more or less depending upon your microwave).

Makes 4 servings

Since microwave ovens vary in power, you may need to adjust your cooking time.
