“BREAD PUDDING” IS IN:

BREAD PUDDING 
1 (14 oz.) can Eagle Brand sweetened condensed milk
3 cups hot water
2 cups finely diced bread or soft bread crumbs
2 eggs, slightly beaten
1 tbsp. melted butter
1/4 tsp. salt
1 tsp. vanilla or grated rind of 1 lemon

Mix sweetened condensed milk and hot water.

Pour over bread and let stand until lukewarm.

Stir in eggs, butter, salt, and vanilla or grated lemon rind.

Pour into greased 1-quart casserole or baking dish. Set in pan of hot water.

Bake in moderate oven (350°F.) about 1 hour.

Serve with cream.

Makes 8 servings.

COCONUT BREAD PUDDING VARIATION:

1 cup shredded coconut flakes

Proceed as for Bread Pudding, adding 1 cup shredded coconut.
