CUCUMBER-PEA SALAD 
1 c. frozen peas
1/3 c. salad oil
2 tbsp. vinegar
1 tsp. sugar
1/4 tsp. dry mustard
1/4 tsp. paprika
1/4 tsp. dried tarragon, crushed
3 c. torn lettuce
1 sm. cucumber, peeled and chopped
1/2 of a 3 oz. can French-fried onions, coarsely crushed

Pour boiling water over frozen peas; let stand for 2 minutes. Drain thoroughly. For dressing, in a screw-top jar, combine oil, vinegar, sugar, dry mustard, paprika and tarragon. Cover and shake thoroughly. In a salad bowl, combine lettuce, cucumber and peas; toss with dressing. Sprinkle with French-fried onions. Makes 4 servings.
