STUFFED CHICKEN BREASTS 
1 to 2 tbsp. vegetable oil
1/4 c. real lemon juice
1 to 2 tbsp. butter
1 tbsp. crushed garlic
4 boneless, skinless chicken cutlets
Bread crumbs
1 box Stove Top stuffing mix (or use your own stuffing recipe)

Pound chicken breasts to tenderize. In fry pan heat oil, butter, lemon juice and garlic. Saute. Prepare stuffing mix as directed. Pour bread crumbs in plastic bag, wet cutlets with water. Place in bag and shake until coated with bread crumbs.

Place 2 to 3 tablespoons stuffing mix on each cutlet and roll. Place in fry pan, seam side down or tie with string. Cover and cook on medium heat for 15 to 20 minutes (until chicken is fully cooked), turning occasionally.

Accompany with baby red potatoes and vegetables for a fast and delicious meal.
